Kiwi Fruit Chutney Recipe

Ingredients
Olive Oil – 1 tblsp
Garlic – 1 tsp , minced
Fresh Ginger – 1 tbsp, chopped
Onion – 1/3 cup, chopped
Curry Powder –  1/2 tsp
Dried Red Pepper Flakes – 1/4 tsp
Kiwi Fruit – 5 peeled, diced, divided
Banana – 1, peeled, diced
Orange Juice – 2 tbsp
Lime Juice – 2 tbsp
Malt Vinegar – 2 tbsp
Brown Sugar – 2 tbsp
Fresh Cilantro Leaves – 1 tbsp, chopped
Fresh Mint Leaves – 1 tbsp, chopped

Method
1. Combine all ingredients and put the mixture in a saucepan.
2. Boil it gently for an hour until thick and soft.
3. Stir it occasionally.
4. Cool it and transfer into a sterilized jar.
