Corn Kernels – 1 cup
Onion – 1, finely sliced
Salt – 3/4 tsp
Water – 1 cup
Coconut Milk – 1/4 cup, made from 1/2 grated fresh coconut
Vegetable Oil – 2 tblsp
1. Heat oil and fry onion in it till soft and pale gold. Drain excess oil.
2. Add corn and mix well then add salt and water and cook, covered, on low heat till water has dried.
3. Add coconut milk and continue cooking till corn is soft and almost dry.
4. Serve as a savoury or as an accompaniment to cutlets.
