Basmati Rice with Potato Recipe

Basmati Rice – 1 1/2 cups
Oil – 1 tblsp
Cinnamon Stick – 1, small
Bay Leaf – 1
Black Cumin Seeds – 1/4 tsp
Green Cardamom Pods – 3
Onion – 1, medium sliced
Fresh Root Ginger – 1 tsp, grated
Garlic – 1 tsp, crushed
Turmeric – 1/4 tsp, ground
Salt – 1 1/2 tsp
Potato – 1 large, roughly diced
Water – 2 cups
Fresh Coriander – 1 tblsp, chopped

1. Wash the rice well and leave it to soak in water for 20 minutes.
2. Heat the oil in a heavy pan, add the cinnamon, bay leaf, black cumin seeds, cardamoms and onion and cook for about 2 minutes.
3. Add the ginger, garlic, turmeic, salt and potato and cook for 1 minute.
4. Drain the rice thoroughly. Add it to the potato and spices in the pan.
5. Stir to mix, then pour in the water followed by the coriander.
6. Cover the pan with a lid and cook for 15-20 minutes.
7. Remove from the heat and leave to stand, still covered for 5-10 minutes before serving.
