Yogurt Salad

Ingredients:
Cabbage – 115 gms
Plain Yogurt – 1 1/2 cups
Clear Honey – 2 tsp
Carrots – 2, medium, thickly sliced
Spring Onions – 2, roughly chopped
Sultanas – 1/3 cup
Cashew Nuts – 1/2 cup (optional)
White Grapes – 16, halved
Salt – 1/2 tsp
Fresh Mint – 1 tsp, chopped

Method:
1. Shred the cabbage finely.
2. Using a fork, beat the yogurt in a bowl with the honey.
3. In a separate bowl mix together the carrots, spring onions, cabbage, sultanas, cashew nuts, grapes, salt and the chopped fresh mint.
4. Pour the sweetened yogurt mixture over the salad, mix well and serve.
