Carrot Cashew Payasam Recipe

Cashew Nuts – 1/2 cup
Warm Milk – 1 cup, for soaking the cashew nuts
Milk – 1 1/2 litres
Carrot – 1 1/2 cups grated
Ghee – 2 tblsp
Sugar – 1/2 cup
Green Cardamoms – 6, crushed

1. Soak the cashew nuts in 1 cup warm milk for half an hour.
2. Boil 1 1/2 litres in a heavy bottomed pan. Keep stirring till it reduces to half.
3. Fry the grated carrot in 2 tbsp ghee for 5 minutes.
4. Grind to a coarse paste the soaked cashewnuts and the fried carrot.
5. Add to the milk. Mix in the sugar and simmer till ingredients are well blended.
6. Stir in the crushed cardamoms.
7. Serve chilled.
