Ingredients:-
Chicken – 450 gm, trimmed of fat and cut into pieces
Minced chicken – 225 gm
Butter – 25 gm
Onion – 1 large, chopped
Garlic – 2-3 cloves, peeled and crushed
Coriander – 2 level tsp
Cumin – 1 level tsp
Ginger Paste – 1/2 tsp
Turmeric – 1/2 tsp
Cinnamon stick – 1
Tomato sauce – 1 tbsp
Chicken stock – 510 ml
Salt and pepper – to taste
Basmati rice – 350 gm
Seedless raisins – 50 gm
Cashews – 50 gm
Potatoes – 4 small
Lime juice – 2 tbsp
Garnish – coriander leaves
Method:
1. Melt the butter in a large thick bottomed pan, add onion and fry gently for 5 minutes.
2. Add garlic paste, chicken pieces and the minced chicken, stirring constantly until browned.
3. Add the spices, stirring for a few minutes more.
4. Then stir in tomato sauce.
5. Add 150 ml of the chicken stock and add salt and pepper to taste.
6. Bring to boil and keep stirring.
7. Then lower the heat, cover and cook until the meat is tender.
8. Peel the potatoes, cut them into cubes.
9. Add the remaining stock and bring to boil, then add rice, lime juice and cubes of potatoes.
10. Cover and simmer for 15 minutes or until the rice is tender.
11. Fold the raisins and nuts into the cooked rice and heat for three minutes.
12. Taste and adjust the seasoning.
13. Transfer the pilau into a serving Garnish with chopped coriander leaves.
