A zucchini – peeled
2 cups Sweet Basil leaves
1/4 cup virgin olive oil
1 tsp crushed garlic
1/2 tsp salt
1/4 cup pine nuts
A handful of black olives and sliced peppers for flavour
1. For the pesto sauce, process basil leaves, olive oil, salt and garlic in a food processor.
2. Add pine nuts and process till the sauce is smooth.
3. To make your zucchini pasta, use a spiral slicer to cut thin noodle-like slices.
4. Finally, mix the ‘pasta’ with the pesto sauce and dig in!
