Vegetable Oatmeal Upma Recipe

Carrot – 1, chopped
Beans – 1, chopped
Onion – 1, chopped
Tomatoes – 2, chopped
Potato – 1, chopped
Green Peas – 1 cup
Curry Leaves – 2 strings
Coriander – 1 bunch
Green Chillies – 6
Cumin Seeds – 1/2 tsp
Urad Dal – 1/2 tsp
Oats – 250 gms
Water – 1 1/2 cup
Oil as required
Salt as per taste

1. Heat the oil in a pan.
2. Add cumin, chillies, curry leaves, urad dal and coriander leaves.
3. Once they begin to crackle add the chopped vegetables.
4. Once cooked, add oatmeal, water and salt to taste and bring to a boil.
5. Serve hot.
