Ingredients

  • 1/4 kg Potatoes
  • 1/4 kg Small Round Brinjals
  • Oil for Frying
  • 1/2 tsp Garam Masala Powder
  • 3/4 cup Onions (finely cut)
  • 1 tsp Red Chilli Powder
  • 1 tbsp Fresh Cream
  • Salt as Required
  • 1 tbsp Coriander Leaves (finely cut)
  • 2 1/2 tbsp Thick Tamarind Extract
  • 1/4 cup Tomatoes (chopped)

For Dry Roast and Grind:

  • 1 tbsp Dhania
  • 1 tbsp Poppy Seeds
  • 1 tbsp White Sesame Seeds
  • 1 tbsp Roasted Peanuts

Instructions

  • Coarsely grind the dry roasted ingredients with two chopped onions.
  • Slice brinjals lengthwise and cook potatoes, peel, and cut lengthwise.
  • Deep fry both vegetables separately until golden brown.
  • In a pan, heat oil, fry onions till golden, add chopped tomatoes, and stir.
  • Add the ground paste and fry till the oil separates.
  • Add garam masala powder, salt, chilli powder, and tamarind extract.
  • Pour 2 cups of water; boil until the gravy thickens.
  • Add fried potatoes and brinjals, cook for a few more minutes, and remove from heat.
  • Garnish with coriander leaves and serve hot.
