Potato Kofta Curry

Ingredients:
For Koftas
250 gms Potatoes, boiled, peeled and mashed
2 tblsp Cornflour
1/4 tsp Ginger, grated
1/4 tsp Garam masala
2 Green Chillies, minced
2 tblsp Coconut, grated
handful of Coriander leaves, finely sliced
Salt to taste

For Filling
125 gms Boiled Peas, coarsely chopped
1 tblsp Cashewnuts, sliced
1 tblsp Raisins, sliced

For Curry
100 gms Onions, grated
1/2 tsp Ginger, grated
1/2 tsp Garlic, grated
handful of Coriander leaves, sliced
1/4 tsp Turmeric powder
1 tblsp Dhania-Jeera powder
1/2 tsp Cumin seeds
1/2 tsp Garam masala
2 tblsp Cashewnut powder
2 tblsp Cream
Salt and Chilli powder to taste

For Garnishing
Seedless Grapes
ripe Mango pieces
Pineapple slices

Method:
1. Mix potatoes with cornflour and salt.
2. Mix all the filling ingredients together.
3. Form potato mixture into balls around the filling ingredients.
4. Deep fry the balls to a golden colour.
5. Heat 3 tblsp of ghee and fry the cumin seeds, then add ginger, garlic and onions and fry till the contents become soft.
6. Then add tomatoes, spices, salt and cashewnuts.
7. Cook till they become thick.
8. Pour in 2 cups of water, boil for 5 minutes, mix in the cream and pour the curry over the koftas.
9. Garnish with the fruits of your choice.
