Tomatoes – 2, cut in chunks
Tomato juice – 1 cup (or 2-3 tomatoes juiced)
Lemon juice – 1/2 lemon (peeled if using a juice machine)
Lemon rind – 1 tsp, freshly grated
Basil leaves – 6, fresh rinsed
1. Place the tomato chunks in a freezer bag and freeze them until solid.
2. Pour the tomato juice into a blender and add the frozen tomato chunks, lemon juice, lemon peel and basil.
3. Blend on high speed until smooth and serve immediately.
