Gongura Pickle

Ingredients:
Gongura Leaves – 2 bunches, washed
Green Chillies – 5 to 6 (as as desired), chopped
Sesame Seeds – 1 tsp
Urad Dal – 1 tsp
Fenugreek Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Coriander Seeds – 1/2 tsp
Salt as per taste

For Seasoning:
Oil – 1 tblsp
Mustard Seeds – 1/2 tsp
Chana Dal – 1/2 tsp
Dry Red Chilli – 1
Urad Dal – 1/2 tsp

Method:
1. Heat little oil in a pan.
2. Fry the gongura leaves till tender.
3. In another pan, fry the green chillies and keep aside.
4. Roast the sesame seeds, cumin seeds, urad dal, fenugreek seeds, coriander seeds and dry red chilli.
5. Keep aside to cool and grind them together..
6. Grind the green chillies and gongura leaves together to a paste.
7. Mix all the ground ingredients and add salt.
8. Grind them again till well mixed.
9. Heat 1/2 tblsp oil in a pan.
10. Fry all the seasoning ingredients and pour over the pickle
11. Serve hot with rice.
