Microwave Avial Recipe

Cooking time: 17:30 mins
For vegetable
 100 gms carrot (chopped)
 100 gms beans (chopped)
 50 gms bottle gourd (chopped)
 100 gms brinjals (chopped)
 100 gms potatoes (chopped)
 50 gms drumsticks
 100 gms cauliflower (cut into florets)

For Paste
 ½ coconut (grated)
 6 green chillies

For Tempering
 200 gms. dahi (beaten)
 2 – 3 dry red chillies
 6 – 8 curry leaves
 1 tsp mustard seeds
 1 tbsp oil
 Salt and chilli powder

1. Make a paste of coconut and green chillies.
2. Wash and chop all vegetables to approx. 1 inch pieces. Microwave (covered) in a micro safe bowl with ½ cup water at 100% power for 9 – 10 mins.
3. Add microwaved vegetables, prepared coconut and chilli paste, beaten curd and salt and pepper. Microwave (covered) at 60% power for 6 mins.
4. In another microwave safe bowl microwave oil at 100% power for 30 secs. Add mustard seeds, dry red chillies and curry leaves. Microwave at 100% power for 2 mins.
5. Pour this tempering over cooked vegetables and microwave for 2 mins at 100% power.
6. Allow to stand for 5 mins.
7. Serve hot with poories and rice.
