Prawn Chilli

 250 gm king-size prawns
 2 green onions, shredded
 8 chillies, seeded and slitted
 1 inch piece ginger, shredded
 1 tbsp brandy
 2 tbsp cornflour mixed with 2 beaten egg whites
 1 tbsp soya sauce
 2 tbsp, vinegar
 2 tsp sugar
 Salt and pepper to taste
 A few parsley leaves
 2 flakes garlic

1. Mix together sugar, sauce, salt and vinegar.
2. Mix prawns with brandy and cornflour mixture.
3. Deep fry the prawns and remove to a plate.
4. Heat 3 tbsp oil and fry ginger, onion, chillies and 2 flakes crushed garlic, when fragrant, put in the prawns along with vinegar mixture, heat thoroughly and serve hot.
