300 gm prawns, shelled and cleaned
2 tbsp minced green onions
1 tsp brandy
1 tsp ginger paste
3/4 cup salted cashewnuts
Salt and pepper to taste
1 egg white mixed with 1 tbsp cornflour
1. Mix prawns with onion, ginger, salt and brandy and set aside for 1 hour.
2. Put some pepper into the egg mixture.
3. Dip the prawns in the egg mixture and deep fry to a golden colour.
4. Drain. Mix in the cashewnuts if you like boiled peas and parsley.
5. Serve hot.
