Fried Prawns with Spinach

Ingredients
500 gm cleaned prawns
500 gm cleaned spinach, ground
1 tsp minced ginger
1 cup chicken stock
2 tsp soya sauce
4 tbsp pureed tomatoes
2 tbsp cornflour dissolved in ½ cup water
Salt and pepper to taste

Method
1. Heat 4 tbsp oil and fry prawns to a pink colour.
2. Add ginger, spinach, chicken stock, soya sauce, tomatoes, salt and pepper.
3. Cook for 10 minutes.
4. Add the cornflour and cook till thick.
5. Serve with boiled rice.
