Bitter Gourd Pickle

Bitter Gourd
Ingredients:
Small Tender Bitter Gourds – 250 gms, cleaned, washed, seeds removed, chopped
Tomato – 1, chopped
Juice of 1 Lemon
Green Chillies – 2, chopped
Red Chilli Powder – 1 tsp
Gingelly Oil – 5 tblsp
Mustard Seeds – 1 tsp
Asafoetida Powder – 1 tsp
Salt as per taste

Method:
1. Combine the bitter gourds, tomatoes and green chillies in a pan.
2. Add salt, red chilli powder and mix well.
3. Heat oil in a pan.
4. Add mustard seeds and asafoetida powder.
5. Fry till mustard seeds start to splutter.
6. Add the vegetables and stir for a minute.
7. Add lemon juice and mix.
8. Serve.
