Ingredients

To marinate brinjal:

  • 12 Brinjals (small size)
  • 2 tsp Ginger and garlic (grated)
  • 1/2 tsp Chilli powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 1/2 tsp Coriander powder
  • 3 tsp Lemon juice
  • 1/2 tsp Salt

Ingredients for gravy:

  • 2 tbsp Dry coconut powder
  • 1 cup Onions (chopped)
  • 1/2 cup Tomato (chopped)
  • 1/2 tsp Mustard seeds
  • 4 Curry leaves
  • 1/2 tsp Chilli powder
  • 1 tsp Cumin powder
  • 1 1/2 tsp Coriander powder
  • Garam masala powder
  • 4 tbsp Coriander leaves (chopped)
  • 2 tbsp Peanuts (crushed)
  • 1/2 tsp Salt – 1/2 tsp
  • Cooking oil as required

Instructions

  • Slit brinjal into four pieces lengthwise, keeping pieces attached.
  • Marinate with ginger, garlic, chilli powder, turmeric, cumin, coriander, lemon juice, and salt. Set aside for 30 mins.
  • Fry coconut powder and 2 tbsp onions. Grind to a paste.
  • Heat oil, add mustard seeds, curry leaves, and remaining onions. Cook for 2 mins.
  • Add ginger-garlic and coconut paste, and cook till thickened.
  • Add tomatoes, dry powders, and salt. Fry till the masala is well-cooked.
  • Add brinjals with water. Cook covered on low heat for 15 mins.
  • Add sugar, lemon juice, garam masala, crushed peanuts, and coriander leaves.
  • Cover and keep for five more minutes.
  • Serve with rice.
