Szechuan Deep-Fried Mutton With Chilli

 500 gm lean mutton, cubed
 1 tbsp brandy
 2 tbsp soya sauce
 3 red Kashmir chillies
 6 flakes garlic, minced
 3 green onions, minced
 1 tsp sugar
 1 tsp minced ginger
 ½ tsp coarsely ground pepper
 2 tbsp chilli sauce
 100 gm carrots
 200 gm peas
 Â¼ cup sliced celery
 Salt to taste

1. Soak the chillies in water.
2. Discard seeds and shred when they become soft.
3. Heat 3 tbsp oil and fry celery, carrots and peas till slightly soft.
4. Add salt, mix well and drain well.
5. Deep fry mutton for 2 to 3 minutes.
6. Drain. Heat 3 tbsp oil and fry garlic for 30 seconds.
7. Add sauces, chillies, onion and ginger.
8. Mix in sugar, salt, pepper, mutton and vegetables.
9. Stir well and serve hot.
