Shimi Ka Achar


Ingredients for Shimi Ka Achar (String Bean Pickle):
String bean (Shimi) – 1/2 kg
Sesame seeds – 100 gms
Green chillies – 6 to 7, sliced
Lemon juice – 1 tsp
Salt – 1 tsp

1. Wash the string beans thoroughly and cut it into thin slanting slices. Boil the beans for five minutes and strain it.
2. Roast the sesame seeds for 3 minutes and then grind it to make a thick paste.
3. Fry few sliced green chillies in hot oil.
4. Mix the soaked beans with fried chillies, salt, lemon juice and the paste of sesame seeds.
5. Serve with selroti.
