Ingredients:
Gym pumpkin – 150 pieces, dims
Diced potatoes – 1 1/2 cup
Large diced brinjal – 1 cup
Large dry and slit chillies – 2 to 3 pieces
Cooking oil – 2 tbsp
Fenugreek seeds – 1/2 tsp
Aniseeds – 1/2 tsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Bay leaves – 2 pieces
Chopped green chillies – 2 pieces
Turmeric powder – 1 tsp
Milk – 1 tsp
Water as required
Sugar – 1/2 tsp
Salt as per taste
Method:
1. Thoroughly fry the spices till they turn brown.
2. Add vegetables to the spices and mix well.
3. Now add the tastemakers, salt, sugar, green chillies and turmeric and mix them carefully.
4. Add sufficient water and milk to the ingredients.
5. Simmer til the vegetables are tender and the water gets absorbed.
6. Serve hot with rice or pooris.
