Sour and Spicy Lemongrass Shrimp Soup

Ingredients:
Water – 4 cups
Lemongrass – 2 stalks, fresh and sliced
Ginger – 3 one inch slices, fresh and sliced
Tamarind paste – 1 tbsp
Fish sauce – 1 tbsp
Shrimps – 2 medium
Chilly peppers – 12
White onion – 1, sliced
Roasted chilli paste – 2 tbsp
Mushrooms – 1/2 cup
Tomato – 1, chopped
Lime juice – 4 tbsp
Cilantro – 2 sprigs

Method:
1. In a soup pot, boil the water and add the lemongrass, ginger, tamarind paste and fish sauce.
2. Shell and de-vein the shrimps and add to the pot. Boil for 3 minutes.
3. Add the sliced onions, roasted chilli paste and the mushrooms and boil for another 8 minutes.
4. Add the chilly peppers and the tomatoes. Remove from heat and add the lime juice.
5. Add the fish sauce and garnish with cilantro leaves.
6. Serve hot.
