Pineapple Fried Rice


Pineapple Fried Rice
Rice – 1 cup, cooked
Pineapple – 1/2 cup, chopped
Vegetable Oil – 3/4 tblsp
Spring Onions – 2, finely sliced (keep some for garnish)
Red Capsicum – 1/4, chopped
Ginger – 1 tsp, minced
Green Chillies – 2, small, chopped
Cashewnuts – 1/4 cup
Soy Sauce – 1 tblsp

1. Heat oil in a pan over medium flame.
2. Add the capsicum, spring onions, ginger and green chillies.
3. Stir-fry for a minute or two.
4. Add the rice and cook for 5 minutes, stirring from time to time.
5. Add the pineapple pieces, soy sauce and cashewnuts.
6. Mix well and cook for 2 minutes.
7. Garnish with the reserved spring onions.
8. Transfer to a serving plate.
9. Serve at once.
