Sour and Spicy Chicken Soup

Boneless chicken (shredded) –  400 gms
Chicken stock – 4 cups
Mushrooms (cut) – 100 gms
Cherry tomatoes (halved) – 6
Lemongrass – 1 stalk
Kaffir lime leaves – 2-3
Fish sauce – 3 tbsp
Fresh lime juice – 4 tbsp
Sugar – 1/2 tsp
Red chillies – 6-8

1. In a pot, take the chicken stock, lemongrass and the lime leaves and bring to a boil.
2. As the soup boils, add the chicken shreds, mushrooms, fish sauce, lime juice and sugar and cook until the chicken becomes tender. Simmer
3. After the chicken becomes white, add the cherry tomatoes and the red chillies and simmer for 10-15 minutes.

Serve hot.
