Coriander Paneer

A simple, tasty and delicious paneer side dish for roti, naan or pulao.
Coriander Paneer

Ingredients:
Paneer – 100 gms
Maida – 3 tblsp
Corn Flour – 1 tblsp
Black Pepper Powder – 1/4 tsp
Oil as required
Salt – 1/4 tsp

For the Coriander Sauce:
Coriander Leaves – 1/2 bunch
Garlic – 4 cloves
Green Chillies – 2 to 3
Onion – 1, medium
Soy Sauce – 1/2 tblsp
Juice of 1/4 Lemon
Oil as required
Salt as per taste

Method:
1. Mix the maida, corn flour, salt, black pepper powder and enough water in a bowl.
2. Mix to a thick, pourable consistency.
3. Dice the paneer into small pieces and add to the batter.
4. Heat oil in a deep frying pan over medium flame.
5. Fry the paneer pieces in hot oil, allowing any excess batter to drip off, until golden brown.
6. Remove and keep aside.
7. To make the sauce, finely chop the onion, garlic and green chillies.
8. Grind the coriander leaves, garlic and green chillies to a fine paste, without adding water.
9. Add the lemon juice and mix well.
10. Heat little oil in a pan over medium flame.
11. Saute the onions for a minute or two.
12. Add the ground paste and stir-fry for a minute.
13. Add soy sauce, enough water and bring to a gentle boil.
14. When the raw smell disappears, add the fried paneer pieces and stir well.
15. When the gravy starts to thicken, switch off the flame.
16. Garnish with coriander leaves.
17. Serve as a side dish with roti, naan or pulao.
