Ingredients:
Flour – 2 cups
Dry ginger – 2 tsp full
Butter – 1/2 cup
Sugar – 1/2 cup
Ginger preserve – 1/2 cup
Golden syrup – 2 tblsp
Eggs – 4
Bicarbonate of soda – 1/2 tsp
Milk – 2 tblsp
Method:
1. Cream the butter and sugar together and mix in the golden syrup.
2. Beat up the eggs, add them gradually with the flour.
3. When well beaten, add the powdered ginger and the preserved ginger cut into small pieces about the size of raisins.
4. Lastly, add the soda dissolved in milk.
5. Pour the mixture into a greased baking tray, and bake in a moderate oven for about 1 1/2 hours.
