Ingredients:
1/2 kg tomatoes (chopped into small pieces)
1/4 kg peas (cooked)
1/4 kg cucumber (skinned and chopped into small cubes)
2 carrots (grated)
1/4 kg capsicum (chopped finely)
1 bunch of coriander leaves (chopped finely)
salt and pepper to taste
juice of one lemon
Method:
1. Mix tomatoes, peas and cucumber.
2. Add salt and pepper.
3. Mix in the carrots and capsicums.
4. Garnish with coriander leaves.
5. Add lime juice.
This goes well with any rice.
