2 cups flour
1/2 tsp salt
4 tbsp vegetable shortening/vanaspati ghee or vanaspati for frying
For the filling
2 cups grated copra
1 cup sugar
3 tbsp raisins
2 tbsp cashew nuts, chopped
1/2 tsp cardamom powder
3 tsp poppy seeds
1. Mix the salt, flour and vanaspati with very little water to form a stiff dough. Cover and leave for 30 minutes.
2. Mix together all the ingredients for the filling.
3. Divide the dough into lemon-sized balls and roll into puris. Place one tablespoon of the stuffing in one half and fold the other half over so that the ends meet. Press the edges together with wet fingers to seal.
4. Deep fry the puffs in hot ghee to golden.
Since these puffs keep, they may be made in advance.
