Ingredients:
4 corn cobs
50 gms carrots
50 gms french beans
100 gms peas
100 gms potatoes
50 gms cauliflower
2 large tomatoes
a little ginger
4 green chillies
1/2 cup grated coconut
few curry leaves
1 cup cooked rice
a little sugar
salt to taste
1/2 tsp mustard seeds
1/2 bunch chopped green coriander
oil as needed
Method:
1. Boil corn cobs and grate the kernels.
2. Boil all other vegeables after chopping them into small cubes.
3. Heat 2-3 tbsp oil, add mustard seeds and curry leaves.
4. Add all vegetables and corn, slit green chillies and chopped ginger, sugar and salt.
5. Cook till well blended.
6. Add coconut and rice.
7. Mix well and serve with chopped green coriander.
