2 bananas, sliced
2 tsp grated orange rind
1/2 cup orange juice
1/4 cup sultanas
1 egg white
2 tsp castor sugar
1. Combine bananas, rind juice and sultanans in base of shallow ovenproof dish.
2. Beat the egg white in a small bowl until soft peaks form, gradually adding sugar.
3. Continue beating until the sugar is dissolved.
4. Spread meringue over the banana mixture and bake in a moderate oven for 10 minutes or until the meringue is golden brown.
