Chicken – 250 gms, boneless, cubed
Onion – 1/4 cup, finely chopped
Coconut Milk – 3/4 cup
Water – 1/4 cup
Kaffir Lime Leaves – 3, chopped
Basil Leaves – 1/2 tblsp, finely chopped
Thai Green Curry Paste – 1 tblsp
Oil – 1 tblsp
Lemongrass – 1/2 tblsp, finely chopped

1. Heat oil in a pan over medium flame.
2. Saute the onions till soft.
3. Add the thai green curry paste and mix well.
4. Add the chicken pieces and fry till opaque.
5. Add water and cook till chicken pieces are tender.
6. Add the coconut milk, lime leaves, basil leaves and lemongrass.
7. Stir and bring to a boil.
8. Reduce flame and simmer for 3 minutes.
9. Remove and transfer to a serving bowl.
10. Serve hot with rice.
