Homemade Chicken Stock

Ingredients:
Chicken Bones – 250 gms (meat and skin removed)
Water – 6 cups
Onion – 1, large, quartered
Celery Stalks – 3, cut into 2 inch pieces
Carrots – 2, cut into 1 inch pieces
Garlic Cloves – 3
Peppercorns – 10
Bay Leaves – 2

Method:
1. Combine all ingredients in a large pan.
2. Bring to a boil over high heat.
3. Reduce heat and simmer for two to three hours.
4. Remove from heat
5. Strain the stock to remove chicken and vegetables.
