Egg Fried Rice with Ginger


A simple and delicious fried rice with egg and ginger.
Egg Fried Rice with Ginger

Basmati Rice – 5 to 6 cups, cooked
Eggs – 4, medium, beaten
Spring Onions – 2 bunches, chopped
Green Peas – 2 cups, shelled (thawed if frozen)
Cabbage – 1 cup, chopped
Green Capsicum – 1 cup, chopped (optional)
Soy Sauce – 5 to 6 tblsp
Ginger – 2 tblsp, minced
Oil – 1 to 1 1/2 tblsp
Salt as per taste

1. Heat 1/2 tblsp oil in a pan over medium flame.
2. Add the eggs and cook until well scrambled.
3. Remove and keep aside.
4. Add the remaining oil.
5. Add the ginger and spring onions.
6. Cook for a minute or two.
7. Add the peas, cabbage, capsicum and cooked rice.
8. Stir well and cook for 3 to 5 minutes.
9. Add the soy sauce and eggs.
10. Mix well and cook for 2 to 3 minutes more.
11. Remove and serve.
