Curry Paste

Ingredients:
2 tbsp roughly chopped lemon grass
2 tsp grated lemon rind
1 tbsp ginger paste
7 small dried red chillies – soaked in water for 15 minutes
2 1/2 tsp garlic paste
2 small onions
salt

Method:
Pound together all ingredients except chillies to form a paste.

Chop the chillies and add to the paste.
