A simple, delicious and healthy salad with easily available ingredients. Great as a starter, appetizer or simply as an evening snack.
Cucumber – 1
Roasted Peanuts – 50 gms
Red Onions – 1/4 cup, finely chopped (optional)
Sugar – 1/2 tsp
Lemon Juice – 3 tsp
Coriander Leaves – few
Salt as per taste
1. Peel and dice the cucumber.
2. Lightly crush the peanuts and transfer to a bowl.
3. Add the cucumber pieces, lemon juice, sugar and salt.
4. Mix well.
5. Garnish with coriander leaves.
6. Serve at once.
