A simple anytime salad with sweet corn and capsicum. Can be served as an appetizer or as a starter or even as an evening snack to kids.
Ingredients: Sweet Corn Kernels – 200 gms Green and Red Capsicums – 1/2 cup, sliced lengthwise or cubed, seeds removed Juice of 1 large Lemon or 2 medium Lemons Olive Oil – 2 1/2 tblsp Pepper Powder – little Salt as per taste
Method: 1. Boil the sweet corn kernels in a pan of water until soft. 2. Drain well and transfer to a mixing bowl. 3. Add the capsicum, lemon juice, olive oil and mix well. 4. Sprinkle pepper powder and salt. 5. Serve at once.
