Ingredients:
350 gms. strawberries, washed and sliced lengthwise into 4
¼ cup fresh apple juice (unsweetened)
Lemon Sauce:
¼ cup fresh orange juice
1 pear, cored and grated
1 tsp. lemon juice
1 tsp. lemon rind
¾ cup low fat plain yoghurt
Method:
Place the strawberries in a bowl. Pour the apple juice over it and keep in the refrigerator to chill.
Combine the orange juice, pears,lemon juice and lemon rind in a saucepan.
Cover and simmer until the liquid is slightly reduced. Chill in refrigerator.
Spoon the orange cream over strawberries and serve.
