Vegetable Fried Rice with Egg Recipe

A delicious and simple fried rice with scrambled eggs. Great for packed lunches or for using leftover rice.
Vegetable Fried Rice with Egg
Eggs – 2
Spring Onions – 2, sliced
Onions – 1/4 cup, chopped
Cabbage – 2 tblsp, grated (optional)
Green Chillies – 1 to 2, finely chopped
Green Peas – 2 tblsp
Cucumber – 1/4 cup, chopped
Capsicum – 1/2 cup, chopped
Carrot – 1/2 cup, chopped
Garlic – 1/4 tsp, minced
Ginger – 1/4 tsp, grated
Basmati Rice – 1 to 1 1/2 cups, cooked (or use leftover rice)
Soy Sauce – 1 tsp
Oil – 2 tsp
Salt as per taste

1. Whisk the eggs and soy sauce together in a bowl.
2. Heat oil in a pan over medium flame.
3. Saute the vegetables for 2 minutes.
4. Add the ginger, rice and stir well.
5. Add salt and cook for a minute.
6. Make a small well in the center and pour the egg mixture.
7. Scramble until the egg is cooked and mix well until everything is mixed thoroughly.
8. Remove from flame.
9. Serve at once.
