Ingredients
1/2 teacup diced pineapple
1/2 teacup chopped fresh coconut meat
1/2 teacup diced capsicum
2 teacups cooked Basmati rice
To be blended into a dressing
3/4 teacup coconut milk
3 tablespoons grated coconut
1/4 teacup thick fresh cream
A few drops coconut essence
Salt and pepper to taste
Method
1. Mix all the salad ingredients in a bowl.
2. Put in the refrigerator.
3. Just before serving, add the dressing and mix well.
4. Serve cold on a bed of lettuce leaves.
