Ingredients

  • 1 cup Basmati Rice (washed, soaked for 60 minutes)
  • 1/2 tbsp Ghee
  • 1/2 tsp Cumin Seeds
  • 1/4 cup Onions (finely chopped)
  • 1/4 cup Green Peas (shelled)
  • 1/2 cup Potato (peeled, cubed)
  • 1/4 cup Paneer (cubed)
  • 1/4 cup Carrots (cubed)
  • 1/4 cup Mushrooms (finely chopped)
  • 1/4 cup Cashewnuts (halved, roasted)
  • 1/4 cup Almonds (dry roasted)
  • 1/4 cup Lotus Seeds
  • 1 tbsp Raisins
  • 1/4 cup Tomato Puree
  • 1/4 tsp Garam Masala Powder
  • 2 cups Hot Water
  • 1/2 tsp Vetiver
  • Salt as per taste

Instructions

  • In a pan, heat 1/2 tbsp ghee over medium flame.
  • Saute the onions and cumin seeds until browned.
  • Add potatoes, paneer, and remaining ghee. Cook for 5 minutes.
  • Add peas, carrots, mushrooms, cashew nuts, almonds, lotus seeds, and raisins. Cook for another 5 minutes.
  • Stir in basmati rice, tomato puree, salt, garam masala powder, and water. Cover and cook for 10-12 minutes.
  • Add vetiver and cook for five more minutes.
