An ideal dish for those on diet.
Ingredients:
Red Pumpkin – 1/2 cup, grated
Aval (Poha) – 1/4 cup
Coconut – 1/4 cup, grated
Jaggery – 1 tblsp, grated
Curd – 1 tblsp
Green Chillies – 1 tblsp, finely chopped
Coriander Leaves – 1 tblsp, finely chopped
Oil – 1 tsp
Mustard Seeds – 1/4 tsp
Urad Dal – 1/4 tsp
Asafoetida Powder – a pinch
Salt as per taste
Method:
1. Mix the pumpkin, aval, coconut, jaggery, curd and salt in a bowl.
2. Heat oil in a pan.
3. Fry the mustard seeds, urad dal, asafoetida powder and green chillies for a minute.
4. Pour over the pumpkin mixture.
5. Garnish with coriander leaves.
6. Serve at once.
