Zucchini Curd Pachadi Recipe

Zucchini – 1 cup, peeled, chopped
Red Chilli Powder – 1/2 tsp
Thick Curds – 2 cup
Red Capsicum – 2 tblsp, chopped
Mint Leaves – few, chopped
Dry Fenugreek Leaves – 1/2 tsp
Sugar – 1 tsp
Cumin Powder – 1 tsp
Oil – 1 tsp
Mustard Seeds – little
Asafoetida – little
Urad Dal – little
Salt as per taste

1. Whisk the curd well.
2. Add salt, sugar, mint leaves, red chilli powder, fenugreek leaves and cumin powder.
3. Beat well.
4. Add the capsicum pieces and keep aside for 30 minutes in a fridge.
5. Add the zucchini pieces and mix well.
6. Heat oil in a pan.
7. Fry the mustard seeds, asafoetida and urad dal for 30 seconds.
8. Add to the pachadi and stir.
9. Serve with fried rice, biryani or chapati.
