Coriander and Mint Biryani

Raw Rice – 2 cups
Mint Leaves – 1 small bunch, chopped
Coriander Leaves – 1 small bunch, chopped
Coconut – 1/4 cup, grated
Green Chillies – 2
Onion – 1, finely sliced
Tomato – 1, chopped
Ginger Garlic Paste – 1 tsp
Oil – 3 tblsp
Salt as per taste

1. Dry roast the rice and keep aside.
2. Clean and wash the mint leaves and coriander leaves.
3. Grind them together with coconut and green chillies.
4. Heat oil in a pressure cooker.
5. Saute the onions and tomatoes for a minute or two.
6. Add ginger garlic paste and mix well.
7. Pour 3 cups of water.
8. Add rice, salt, ground coriander mint paste and mix well until evenly combined.
9. Pressure cook until 1 whistle.
10. Remove and serve hot.
