Ingredients:
Zucchini – 500 gms, chopped
Garlic – 1 clove, crushed
Onion – 1, medium, sliced
Thick Cream – 1/4 cup
Olive Oil – 1/2 tblsp
Vegetable Stock – 2 cups
Method:
1. Heat olive oil in a pan over medium flame.
2. Saute the onions for 3 minutes or until soft.
3. Add garlic and cook for 30 seconds.
4. Add the zucchini pieces and cook for a minute.
5. Pour the vegetable stock and simmer for 5 minutes or until the zucchini is tender.
6. Remove and keep aside for 5 minutes.
7. Using a hand blender or a regular blender, blend the soup until smooth.
8. Add 2 tblsp of the cream and mix.
9. Pour into individual serving bowls.
10. Garnish with the remaining cream and serve.
