Watermelon Chutney


White Portion of the Watermelon – 1/2 cup (this can be found between the fruit and skin)
Coconut – 2 tblsp, grated
Green Chillies – 3
Garlic – 1 clove
Curry Leaves – few
Mustard Seeds – 1/4 tsp
Urad Dal – 1/4 tsp
Oil – 2 tsp
Tamarind – as required
Salt as per taste

1. Heat 1 tsp oil in a pan.
2. Stir-fry the watermelons, coconut, green chillies, garlic and tamarind for 1 to 2 minutes.
3. Remove and cool.
4. Then grind to a fine paste.
5. Heat the remaining oil.
6. Fry the urad dal, mustard seeds and curry leaves for 30 seconds.
7. Pour over the chutney.
8. Serve as a side dish with idli or dosa.
