Ingredients:
Rice – 1 cup, cooked
Coconut – 2 to 3 tblsp, desiccated
Zest and Juice of 1/2 Lime
Coriander Leaves – few, chopped
Peanuts or Cashewnuts – 1/2 tsp, chopped, fried, to garnish
Oil – little
Method:
1. Heat little oil in a pan.
2. Stir-fry the coconut for 30 seconds and remove.
3. Add this to the rice and mix well.
4. Add the lime juice and zest.
5. Mix again.
6. Garnish with coriander leaves and cashewnuts.
7. Serve at once.
