Chicken and Tomato Omelette Recipe

Breakfast Omelette with Fruits

Chicken – 1 cup, cooked, chopped
Tomatoes – 1 cup, chopped
Potatoes – 1 cup, chopped
Eggs – 4
Salt as per taste
Black Pepper Powder as per taste
Olive Oil – 2 tsp
Cheddar Cheese – 1/4 cup, grated
Mint Leaves – handful, chopped

1. Heat 1 tsp oil in a non-stick pan over medium flame.
2. Add 1/2 cup of chicken, 1/2 cup of tomatoes, 1/2 cup of potatoes and saute well for 2 minutes.
3. Break 2 eggs in a bowl.
4. Sprinkle salt and pepper powder.
5. Pour over the chicken mixture and tilt the pan slightly to allow the egg to run out.
6. Cook for a minute or two or until the omelette is set.
7. Sprinkle mint and cheese on top.
8. Cook for 30 seconds and remove.
9. Transfer to a serving plate.
10. Serve with toast and fruits .
11. Repeat with the remaining ingredients.

makes 2 Omelettes.
