Asparagus and Green Peas Pulao


Asparagus and Green Peas Pulao

Basmati Rice – 2 cups
Asparagus – 1 cup, chopped
Green Peas – 1 cup
Onion – 1, chopped
Ginger Garlic Paste – 1 tblsp
Cumin Seeds – 1/2 tsp
Oil – 1 tblsp
Water – 2 cups
Coconut Milk – 1 cup
Bay Leaf – 1
Salt as per taste
Coriander Leaves – few, chopped

1. Wash the rice and soak for 15 minutes.
2. Drain and keep aside.
3. Heat oil in a pan.
4. Fry the cumin seeds for 20 to 30 seconds.
5. Add the onions and saute well until light golden brown.
6. Add ginger garlic paste and stir well.
7. After a minute add rice, bay leaf, coconut milk, water and salt.
8. Mix well and cook until the rice is done.
9. Heat oil in another pan.
10. Saute the green peas and asparagus for 2 minutes.
11. Add the asparagus and green peas to the rice.
12. Gently stir and mix well.
13. Garnish with coriander leaves.
14. Serve with a spicy gravy of choice.
