Ingredients:
Shrimps – 200 to 250 gms, cooked
Mango – 1, peeled, diced
Avocado – 1, peeled, diced
Olive Oil – 2 tsp
Spring Onions – 1 tblsp, sliced
Mint Leaves – handful, chopped
Coriander Leaves – handful, chopped
Cucumber – 2 to 3 tblsp, diced (optional)
Lime Juice – 3 to 4 tblsp
Red Chilli Flakes as per taste
Sea Salt as per taste
Method:
1. Combine the avocadoes, shrimps, mangoes, cucumber, spring onions, lime juice, olive oil, red chilli flakes and salt in a large bowl.
2. Gently toss to mix.
3. Garnish with mint leaves and coriander leaves.
4. Serve at once.
5. Best served cold.
