Potato Pulao Recipe

Basmati Rice – 2 cups, cooked
Onions – 2, finely chopped
Potatoes – 5, finely chopped
Ginger – 1/2 tsp, grated
Cumin Seeds – 1 1/2 tsp
Garam Masala Powder – 2 tsp
Green Chillies – 3
Juice of 1 Lemon
Coriander Leaves – handful, chopped
Curry Leaves – few
Salt as per taste
Oil as required

1. Heat little oil in a pan over medium flame.
2. Fry the cumin seeds for 30 seconds.
3. Add the onions, green chillies and ginger.
4. Saute well for 2 minutes.
5. Add coriander leaves, curry leaves, potatoes and stir well.
6. Cover the pan with a lid for 5 minutes or until the potatoes are cooked.
7. Add the cooked rice, garam masala powder and mix well.
8. Add salt, lemon juice and mix again.
9. Simmer for a minute and remove from flame.
10. Serve hot with raita.
